I had Friendsgiving at my house last weekend and I decided to bake up a pie that was gluten free and a vegan, so that everyone could enjoy. Instructions
  1. Preheat oven to 350 degrees F.
  2. Combine all filling ingredients in a medium bowl. Then, pour into pie crust.
  3. Rinse out bowl and in the same bowl, combine all topping ingredients. Then, sprinkle the topping over the filling.
  4. Bake for 35-40 minutes. Allow pie to cool slightly before spooning out.
  5. Serve warm and with vanilla ice cream, Greek yogurt, cool whip or coconut cream, if desired.

*I used gala apples. There is no need to peel them. **I used coconut sugar for my recipe and for the calculation of nutritional information.
